Duck bites and Duck Poppers

Tonight was Dad’s night to cook with Game meat is in the freezer that needs to be used up. So duck bites and duck poppers were on the menu.

Duck Bites
Cubed duck breast
Bacon for wrapping
2/3cup brown sugar
1 Tablespoon of chili powder.
Bake at 350 degrees for 20 minutes

Duck Poppers
Strips of duck breast
Cream cheese
Bacon for wrapping
Bake at 375 for 30 minutes

Here is a pic of the duck breast fillets cut in half and each half went on a duck poppers. Next time I would use more duck and less cream cheese. This is the first time I made these.

1 - Fillets

A large duck breast cut into 8 piece for the duck bites.

I only had two pounds of back so I cut one into three sections for the Bites and one in half for the Poppers. The 1/3rds barely worked for the bites and I usual use 1/2 a strip of bacon, but it got through and finished the job.

Duck Bites on top and Duck Poppers below. I tried them together initially, but the bites get done too fast and the Poppers were not even close. I altered the cooking temp and time after I finished it as shown above. I tried both for 25 minutes at 350 and the bites were over cooked and the Poppers not even close. I threw the Poppers back in for 10 minutes and they were done enough.

    • There is no Sunday Waterfowl hunting in Maryland. You can float Saturday on the Potomac or the Monocacy. The latter has rules to read on like casing the gun through the battlefield and such.
